Lunches are yummy.  It actually took me a long time to figure out how to feed my family something for lunch besides PB&J and canned peaches.  I ended up kind of thinking of our lunch time like a Bistro and I studied what places like “Cafe Zupas” made.  I read about Italy and their cold cut paninis. Then I studied Asian countries and what made their home cooking feel like home.  I looked up favorite brunches on Mother’s Day.  I researched tea time in England.  Then I mixed all that with America’s emphasis on whole foods and balanced blood sugar.

I ended up with three lunch categories.  1). Lunches you cook, 2). Sandwiches and 3). Salad’s & Dressings. 

Here is the first section’s recipes.

  1. Crustless, Bacon, Mushroom Spinach Quiche
  2. Crispy Baked Egg Rolls
  3. Fried Rice
  4. Scalloped Potatoes w/ Ham
  5. Loaded Baked Potato
  6. Cheesy Baked Potato
  7. Baked Sweet Potato – Single Serve
  8. Skillet Potatoes, Sausage & Sour Kraut (Optional)

(Each picture will take you to that specific recipe.  Save each recipe image.  I like to print them and keep them in a three ring binder with plastic sleeves and divider tabs.) 

I have also created a KITCHEN BASICS GUIDE for young women.  If you are starting to build up your kitchen supplies, don’t waste your money on sets.  Just get the best of the basics.
